A dish as nuanced as this requires a wine which will highlight the flavours of the dish and refresh the palate so the wine of choice would be the delicately flavoured Barnsole Dry Reserve 2018 . It has hints of lemon and apple but it also offers a light creamy texture, to balance the soup, and a clean lingering finish to keep the appetite alive.

The white wine is grown on a boutique vineyard by two passionate winemakers near the town of Sandwich. Their philosophy is to tread softly in the environment and to share the land with the local hares, badgers, foxes and many British birds. The first vines were planted in 1993. The vineyard lies between Canterbury and Sandwich near the Isle of Thanet. The vineyard was established in the 1990s by the Danilevich brothers who passed the business over to Sally and Phil three years go. Sally and Phil have invested in new vineyards and planted different grape varieties but have kept a number of the original grapes such as Bacchus. The soils are mixed but include clay, gravels, and alluvial. They aim to make distinctive wines which reflect the vintage conditions.
